I put 4 little snack bags of carrots, 4 pieces of snack celery chopped up, 1 cup of pico de gallo(with cilantro), 1 tablespoon of chicken bouillon, 1 table spoon of chicken bouillon with tomatoe, 2 tablespoons of old bay seasoning. And filled the pot about 3/4 full. I boiled about 15 min. I then added 1 lb of argentina pink shrimp, 2 lbs of large shrimp, and a bag of frozen salad shrimp. I left come back up to a boil and then added 1 teaspoon of garlic powder and 1 teaspoon of cumin powder. Always taste if salt is on point.

Salsa Verde
1 can of La Costeña tomatillos
5 Serrano peppers
3 Jalapeño peppers
1/2 of an onion.
1 handful of cilantro
Boil peppers and onion until soft. Pour can of tomatillos cilantro and boiled peppers and onion in to a blender. season with salt, garlic to your liking.

ENCHILADAS
Ingredients:
corn tortillas(30 pk)
cheddar cheese(2 blocks shredded)
3-4 tbsp chili powder
2-3 tsp onion powder
2-3 tsp garlic powder
2-3 tsp salt
pepper
2-3 tsp ground cumin(comino)
cooking oil
all purpose flour
2-3 cups of water
Fill 4 tbsp of cooking oil in large skillet. Pour 1/2 cup flour and stir. once it creates a paste like substance, startin pouring in water slowly and use whisk to keep from getting clumps. add salt, comino, garlic powder and onion powder. add chili powder until it looks like a dark orange or red color. liquid will start to get thick. if it gets too think add more water. if consistency is like a clumpy gravy add more water. should have a smooth consistency.
fill smaller skillet to half with cooking oil. cook each tortilla 4-5 seconds on each side. dip in the gravy mixture. fill with cheese and roll up. put each rolled enchilada side by side in a 9x13 pan or cookie sheet. add more gravy to top of enchiladas when pan or cookie sheet full and add more cheese on top.
bake in oven heated to 350 degrees. bake until cheese is melted. Eat and enjoy!!!

Swai Fish and Calabacitas
My husband has a love for seafood. He prefers fish, shrimp and other seafood over any other meat. Calabacitas(grey squash) is another one of favorites. The two combined are a very tasty dish. Enjoy!
Calabacitas
2 grey squash chopped
1/2 med onion chopped
1/4 tsp garlic
salt and pepper
1/2 tsp grund cumin
1 tsp canola oil(cooking oil of your choice)
add squash, onion and oil in pan. sauté for 5 minutes. add enough water to barely cover the squash and onion. cover and cook 15 min on med heat.

lemon pepper
cayenne pepper
season both sides of fish filets with lemon pepper generously. season lightly one side with cayenne pepper. cook about 3 minutes on each side or until a little toasted on each side.
serve together with avocado.

Carne Guisada
This is a recipe that I have perfected. After always failing, I finally got it right. You will never go out and order this plate at a restaurant again. I plated this with some black beans. Delicious. Enjoy!
2 lbs beef top round steak cubed
3 tsp flour
1 1/2 tsp salt
1 1/2 tsp pepper
2 tsp minced dried onion
1/4 tsp ground garlic
2 tsp ground cumin
2 tsp chili powder
1/3 cup tomato sauce
2 tsp canola oil or cooking oil of your choice
Brown meat. Season with 1/2 tsp salt and 1/2 tsp pepper. Once meat has browned, sprinkle flour over meat and stir. Pour 1/2 cup water and allow to thicken. after adding water, add remaining ingredients. add more water if it thickens too much or too quick.

Atole de arroz
This has been a long time favorite in my family. My little brother absolutely loves this at breakfast and probably at another other time of day. The cinnamon can be a variation of ground cinnamon or it can be cinnamon sticks. Whatever your preference. And the sugar or sweetner can be increased to your liking. I credit my mom and grandmothers for this recipe. It is awesome. Enjoy!

2 cups of milk
2 tsp ground cinnamon ( 3 or 4 cinnamon sticks can be substituted here)
6 tbsp of sweetner(sugar, splenda, truvia, stevia, honey, agave)
Bring water to boil. add rice. cook for 15 minutes. Add milk and cook an additional 15 minutes. add cinnamon, and sweetner and allow to cook a couple of minutes.

Lentejas Charros
I attended a Christmas party for Herbalife one day. I was troubled as to what to make. I thought to myself, "oh gosh, do I have to make something healthy?" Well the answer was no, but I decided it was just easier to go the healthy route. Therefore, I made something that has become very popular in my house in hopes that everyone would like them, and boy, did they ever. So, that day, I chopped all my ingredients and brought my crockpot to work. I let the pot do all the cooking but I created all the magic. So the recipe is as follows:
2 lbs lentils
2 jalapeños chopped
2 green onions chopped
2 tomatoes chopped
1 bunch of cilantro rough chopped
1 pkg of cubed ham
2 beef flavored bouillon cubes
1/4 tsp garlic
1/2 tsp ground cumin(comino)
You can add more jalapeños if you want spicier. I simply added all of my ingredients into a crock pot and cooked on high for 5-6 hours. These are absolutely delicious and nutritious!!
